Yum, this soup will be perfect for the fall and winter. It is hearty, filling, and full of flavor with ingredients all from Trader Joe’s. A simple one stop shop and recipe is the perfect combination for an easy weeknight meal that can be eaten for multiple meals.

As I’m studying for my Professional Engineering Exam and working full time, I especially am low on energy right now. Meals at home are hard and while my husband is definitely picking up the slack, there are a few nights of the week that he has prior obligations and can’t cook. So, we fill those evenings with pre-made soups, stews, casseroles, and leftovers to avoid ordering takeout.

Enough about me, let’s get to this delicious recipe!

Trader Joe’s Tortellini Soup

This delicious soup is hearty, flavorful, and makes a fun twist on a standard vegetable minestrone. The tortellinis are delicate and melt in your mouth. The subtle flavor of garlic, onion, and tomato sauce meld together to create a delicious meal. Although this recipe says it takes 40 minutes, much of the prep can be done while to onions are sautéing.

  • 1 cutting board
  • 1 sharp knife
  • 1 soup pot I like to use my enameled cast iron pot for soups.


  • 2 tbsp high heat oil
  • 1 large yellow onion
  • 8 cloves of garlic
  • 4 celery stalks
  • 6 carrots
  • 1 tsp salt
  • 1 tsp pepper
  • 1 can smooth tomato sauce
  • 3 containers of hearty vegetable stock
  • 1/2 bag of shredded kale
  • 2 containers of spinach tortellini


  • Add the oil to your soup pot and turn on medium. While the pot is heating up, dice the onion to your desired size. Carefully add the onion to the pot and sauté until translucent or about 5 minutes. Add the garlic (I use the frozen cubes of garlic that can be found in the frozen section of Trader Joe's).
  • While the onions are sautéing, peel and chop the carrots and celery no thicker than 1/4 of an inch. I like to leave my carrots in the round and I chop the celery in half length wise before chopping into smaller pieces. Once the onions are translucent, add the carrots and celery to the pot.
  • Let cook for 7 minutes or until carrots are tender. Add the salt and pepper and stir.
  • Add one can of smooth tomato sauce and mix into the vegetables.
  • Carefully add the 3 containers of hearty vegetable stock. Turn heat up to high and bring to a boil.
  • Once boiling, turn the heat down so the soup is at a low simmer. Add the half bag of Trader Joe's shredded kale.
  • Let simmer for 15 minutes.
  • Carefully add the 2 containers of spinach tortellini and turn the stove heat off. The tortellini will cook in the hot liquid.
  • Either serve up or let cool and put in the fridge for later in the week.
