All I can say is yum! This simple 6 ingredient red curry udon noodle bowl is delicious, simple, and takes about 15 minutes to make. After wanting to get takeout but instead shopping my pantry last night after work, I threw together a few ingredients, and this amazingly yummy bowl came together.

Easy to make, easy to modify, and easy to eat, this Trader Joe’s udon noodle bowl is perfect for a night in.

Red Curry Udon Noodle Bowl

This red curry udon noodle bowl is straight forward and only has 6 ingredients! It's perfect for the busy night after work when you want take out but try to be responsible and eat the food you have at home.

  • 1 Medium Pot
  • 1 wooden spoon
  • 1 cutting board
  • 1 sharp knife


  • 2 heads of baby bok choy
  • 1 package of baked tofu
  • 4 green onions
  • 1 cup Miso Ginger Broth From Trader Joe's (can be swapped for normal veggie broth)
  • 1 bottle of red curry sauce From Trader Joe's
  • 3 packages of udon noodles From Trader Joes (equivalent to one box)


  • Pour the entire bottle of red curry sauce into the pot and combine with 1 cup of miso ginger broth. Stir together until smooth.
  • While the broth/sauce combination is heating up to a boil, wash and chop the baby bok choy into 1 inch thick pieces. Cube the tofu into bite sized pieces and wash and chop the green onion.
  • Once the broth/sauce combination is boiling, add 3 packages of pre-cooked udon noodles and break up with a wooden spoon. Add the chopped bok choy and cubed tofu.
  • Turn the heat down and let simmer for 5 minutes or until all of the ingredients are hot.
  • Plate up, sprinkle some green onions on top, and enjoy!


If you want more vegetables than just bok choy, try adding a bag of frozen Trader Joe’s stir fry vegetables.
